Chicken Francasie

This is a fried chicken dish with a bit of lemon!

Ingredients
1 egg, beaten
1/2 lemon, juiced
1 cup flour
pinch of garlic powder
pinch of paprika
chicken - boneless (we use 5 pieces)
3 Tbsp butter
1 can (14.5 oz) chicken broth
lemon juice (fresh or refrigerated)

Directions

  1. Mix the egg and the 1/2 lemon's juice
  2. In another bowl mix the flour, garlic powder and paprika
  3. Dip the chicken in the egg mixture - then the flour mixture
  4. Cook the chicken in a frying pan in the butter until it's golden brown on both sides
  5. Add the chicken broth and the juice of another lemon (or the refrigerated equivalent) to the pan
  6. Simmer for about 8 minutes until the chicken is done

Snickerdoodle Cookies

This is a good solid snickerdoodle recipe that makes LOTS of cookes (3-4 dozen!)

1 1/2 cups sugar
2 eggs
2 3/4 cups flour
2 tsp cream of tartar (optional)
1 tsp baking soda
1/2 tsp salt
2 tbsp sugar
1 tsp cinnamon

Directions:
Mix together flour, cream of tartar, baking soda, and salt together. Set aside.
Cream together sugar and butter. Add eggs and blend well.
Add dry ingredients to wet ingredients and mix well.
Shape dough into 1 inch balls and roll in the cinnamon-sugar mixture.
Bake for 8-10 minutes at 350 degrees. 



Shortbread Cookies


This is tried and true shortbread recipe!  Yum!

Ingredients:
2 cups softened butter
1/2 cup cornstarch
1 cup butter
3 1/2 cups confectioners sugar

Cream the butter and sugar.  Mix the cornstarch and flour together then add to the wet ingredients.

Put the mixture into baking pan and pierce a few times with a fork.  Cook for 40-45 minutes at 325 and cut while warm.

Chicken Pot Pie

We love a good pot pie and this one is delicious!

Crust
1/2 cup butter
1 1/4 cup flour
salt
1/4 cup water

cut butter into flour and mix in water slowly

Insides
chicken (boiled and shredded)
any veggies you want (potatoes, carrots, celery, squash)
1/4 tsp celery seed
1/3 butter (I used a bit less)
1/3 flour
1 3/4 cup chicken broth
2/3 cup milk

1. Boil and shred chicken, set aside
2. add potatoes to a pot of cold water, add other vegetables to this pot as the water boils.  Add them in the order or how done you want them (ex, I added the potatoes and once boiling - I added spaghetti squash - then carrots - the celery but not for too long)
3. melt butter and saute onion; add salt, pepper and celery seed
4. add flour to butter and cook for a minute
5. slowly add the broth and the milk
6. when the sauce thickens - combine all ingredients and put inside the crust etc
7 bake at 425 for 30-35 minutes
